I believe it's been about 2 months since Jackson has gone on his vegetable strike. He refuses to eat any vegetables unless they are disguised to taste like fruit (ie. covered with applesauce or baked in sweet bread). Well today he really surprised me when he pointed to my dinner plate and wanted some of my spinach! So i gave it to him...and he wanted more! I was thrilled to see my little Popeye loving his spinach! It was one small step for Jackson, and one giant leap for vegetables everywhere! Watch out you Albertson's brand cinnamon apple cheerios, spinach is closing in for the win!
